MARC'S AMAZING CHICKEN CASSEROLE

INGREDIENTS
● 2 lbs chicken breast
● 1/4 lb salami
● 1-2 lbs brussel sprouts
● 1 lb bacon
● 1/8 cup of almond flour
● 3 cheeses:
1 oz mango fire cheese (hannaford)
6 oz cranberry goat cheese
6 oz bacon cheddar
INSTRUCTIONS:
● Cook 1/2 of the bacon unitl only 3/4 done
● Continue to cook other half of bacon until lightly crisp
● Cut salami into thin strips then cut in half
● Cut chicken into strips then cut in half (into thumb size pieces)
● Shred all cheeses
● Cut brussels in half then each half unto thirds
● Toss brussels with olive oil
● Cut 3/4 cooked bacon into pieces and mix with brussels
● Put brussels w/bacon on large cookie sheet
● Put chicken in large oiled casserole dish
● Toss almond flour with chicken to kkep from sticking together
● Cut remainer of bacon into pieces
● Lightly mix cheeses and bacon with chicken
● Place brussels and casserole in oven together
● Bake at 350 for about 35-45 min
OPTIONAL:
Use more cheese such as 3-cheese blend
NOTES:
Brussels can be put in oven a bit before chicken if you like them a bit more cooked
