BASIC LOW CARB BREAD

Yield: 16 servings (slices)

INGREDIENTS
● 1/2 cup butter melted
● 3 tablespoons coconut oil liquified (or olive or avocado oil)
● 6 large eggs
● 1-1/2 cup almond flour
● 1/2 cup coconut flour
● 1 teaspoon baking powder
● 1/2 teaspoon xanthan gum (optional)
● 1 packet of quick yeast in 1-2 tablespoons of cider vinegar (optional), let sit for 5 mins.
● 1 tablespoon of nutritional yeast (optional)

INSTRUCTIONS:
● Break eggs into medium bowl or food processor then blend until combined.

● Add remaining ingredients and process until a dough is formed (about 30 seconds).

● Spread dough into a greased 9×5 inch loaf pan (use an 8x4 pan for taller loaf).

● Bake at 350F about 40 minutes or until top is browned.

OPTIONAL:

NOTES:
● Use less oil for a dryer bread that toasts easier.
● Cover with tin foil half way through once browned.
● Let cool completely before removing from pan.
